Ingredients:
2 brioche toasts
2 eggs
1 slice of Gouda cheese
Handful of cherry tomatoes, sliced
½ avocado, sliced
Handful of iceberg lettuce
Salt and pepper, to taste
Butter or oil, for cooking
Instructions:
Prepare the eggs: Crack the eggs into a bowl, season with salt and pepper, and whisk until smooth.
Toast and soak: Heat a non-stick skillet over medium heat, add butter or oil, and pour the eggs into the pan. Place the brioche toasts on top of the eggs, letting them soak for a few seconds. Flip the toasts to soak the other side.
Cook and flip: Allow the eggs to set and the brioche to toast slightly. Flip the entire egg-toast combo carefully, ensuring the eggs stay intact.
Add the fillings: Place Gouda on one slice of brioche to let it melt. Then, layer on the sliced cherry tomatoes, avocado, and iceberg lettuce.
Fold and serve: Fold any excess egg inward, then press one slice of brioche over the other to form your sandwich. Gently press it together, and enjoy!
