This Green Goddess Salad has quickly become one of my go-to recipes. It’s super fresh, full of different textures, and somehow manages to be both light and satisfying. The base is crisp iceberg lettuce and fluffy quinoa, and it’s loaded with green veggies like peas, green beans, broccoli, and cucumber. Everything gets tossed in a homemade herb-avocado dressing that’s creamy but still light.
It’s great for lunch, meal prep, or even as a side for dinner. I made it once for a casual family dinner and it disappeared fast — always a good sign.
