1 pretzel croissant (or regular croissant)
2 eggs
A handful of fresh arugula
Salt and pepper (to taste)
2 small slices of cheese (like Gouda, Cheddar, or your favorite)
1/4 avocado, sliced
Everything bagel seasoning (or mix sesame seeds, poppy seeds, garlic powder, onion powder and sea salt)
Instructions:
Cook the Eggs: Heat a nonstick pan over medium heat. Crack the eggs in and cook them to your liking — I usually fry them fully, but sunny side up also works. Season with salt and pepper.
Prep the Croissant: Slice the croissant lengthwise, but don't cut it all the way through. If you want it extra good, lightly toast it in the oven or air fryer for a few minutes until warm and slightly crispy.
Assemble: Layer a handful of arugula inside the croissant. Add the hot eggs on top.
Add Cheese and Avocado: Place your cheese slices over the warm eggs so they melt slightly. Then layer on the sliced avocado.
Season: Sprinkle everything bagel seasoning over the top for that extra flavor kick.
Serve: Close up the croissant gently and enjoy immediately while everything’s warm and melty!
